100fps.com has a long detailed look at de-interlacing. The guide explains what is de-interlacing, how you can achieve it and the differences with the various methods. He also has provide a couple of sample clips to illustrate the points. Very good guide for anyone shooting interlaced video.(via FresHDV)

It's geared a little more towards DV work as opposed to cleaning up vidcaps, although all the codecs and programs they reccomend are excellent.
